In a pan, brown 1lb of Italian sausage, 0.5 of a chopped white onion, 1 tbsp of minced garlic, and chopped spinach.
Once the sausage is cooked, drain the grease.
Season to taste with garlic powder, red pepper flakes, and Italian seasoning.
Add 2 cans of petite diced tomatoes and 4 cups of low sodium chicken broth. Bring this all to a simmer.
Add a box of dry ditalini pasta & mix together thoroughly.
Once simmering, cover the pan and turn the heat to medium-low and cook for 8 minutes.
Mix in one 8oz block of cream cheese, half a cup of heavy cream, and shredded parmesan cheese to taste.
Cook until the cheese is melted.
If you prefer it as more of a soup, serve straight away. If you prefer it as a pasta, allow it to cook longer so that some of the liquid evaporates.
