Instructions

Preheat the oven to 375°F and lightly grease a baking dish.
Add the ricotta cheese, shredded Parmesan cheese, grated Parmesan cheese, and Italian seasoning to a small mixing bowl, then stir until the mixture is smooth and fully combined.
Spread half of the leftover spaghetti evenly across the bottom of the prepared baking dish.
Spoon the ricotta cheese mixture over the spaghetti and spread it into an even layer so it covers the noodles.
Add the remaining spaghetti on top of the cheese layer and spread it evenly.
Pour the undrained petite diced tomatoes evenly over the top layer of spaghetti and gently spread them out to help keep the pasta moist while baking.
Sprinkle the mozzarella cheese evenly across the top of the dish.
Place the baking dish into the oven and bake for about 35 minutes, or until everything is heated through and the cheese is melted and bubbly.
Remove the dish from the oven and allow it to sit for 5–10 minutes before serving so it sets slightly and is easier to slice.
